Pumpkin Thing

Okay...don't laugh, but yes, this is a recipe for what I like to call "Pumpkin Thing." It's actually a Brown Betty, if you know what that is.

To make Pumpkin Thing, you need one batch of pie filling for a 9" or 10" pie, half a box of yellow cake mix, and from half to a whole stick of butter. See, that's why this is a "Thing," it's just something I like to throw together sometimes and its far from precise. Anyways, pour the filling into an 8"x8" or 9"x9" square pan, sprinkle the cake mix evenly over it, and dot with the butter. Bake as you would the pie. If you want to double this recipe, use a 9"x13" pan, twice the pie filling, the whole box of cake mix, and a stick/stick and a half of butter (too much butter will make this gross in my opinion, so I use the smaller amount). Bake as you would a single pie, perhaps a TAD longer, but don't let it get too brown.

And that's a Pumpkin Thing. Unlike pie, you serve this warm. Great with vanilla ice cream. Try to only make it when company's coming or you'll eat it all yourself...
