Sausage-Stuffed Pumpkin

What you will need:

1 lb ground sausage*
about 6 slices bread, crumbled
1 egg
1 small onion, diced
1 small cooking pumpkin
salt

*I use breakfast (or "country style") sausage as I eat this dish for breakfast, but you may use Italian. Spicy sausage is good too. I would not use plain pork.

Cut "lid" off of pumpkin and scrape seeds and "guts" out of the pumpkin; wash and pat dry. Discard lid, you won't need it. Sprinkle inside with a little salt. Mix sausage, onion, egg and bread in bowl and stuff pumpkin with mixture. Place in a baking dish with a cup or so of water; bake at 375 degrees for 1 1/2 to 2 hours.

Like I said, I eat this for breakfast. I make this the night before, and scoop all the sausage and pumpkin out of the rind while still warm, chop and mix it up, and keep it in the fridge. Then I fry it like hash and serve with poached eggs.
