I make these year-round.
What you will need:
3/4 cup pumpkin puree
1 T sugar
1/2 t cinnamon
1/4 t nutmeg
-or-
1/2 pint jar of pumpkin butter*
1 cup flour
3/4 cup milk
2 eggs
Mix together the dry ingredients, and then stir in the wet. Make as silver dollar-sized pancakes on a hot greased griddle (the vegetable content requires the smaller pancake size for them to cook properly).
* yeah the sugar content will be a lot higher if you use the pumpkin butter
