Quick Pumpkin Ice Cream

This is a cheating way to make your own pumpkin ice cream.

What you will need:

1 cup pumpkin puree
1/2 cup packed brown sugar
1 t cinnamon
1/4 t nutmeg
-or-
1 pint jar of pumpkin butter

1 quart vanilla ice cream, softened

Especially if you are using the pumpkin butter, I don't recommend French Vanilla ice cream as it is sweeter and richer than plain, and I find it too sweet and rich. Also, try to use a high quality ice cream; the lower quality ones are pumped full of air and won't support the pumpkin puree as well.

Blend it all together. If you are using the pumpkin butter it won't have food coloring in it, so you can add some orange (and maybe some brown) coloring if you like, because otherwise it won't be even remotely orange. Freeze at least a few hours, until firm.

And I might be crazy, but I think pumpkin ice cream is fabulous in a hot fudge sundae. Pumpkin and chocolate go well together. A less-sweet chocolate sauce is better than a sweet one though.
