Eyeball Cookies

A variation of the classic Buckeye cookie, specially formulated for Hallowe'en. ;)

What you will need:

1/2 cup butter, softened
1-1/2 cups peanut butter
1 pound powdered sugar
1 Tbl vanilla extract
12 ounces white chocolate

Cream the butter and peanut butter together. Add the sugar and vanilla and thoroughly blend. Shape into small 1-inch balls and refrigerate on waxed paper for 30 minutes. Melt the white chocolate in the microwave. With a toothpick, dip the "eyeballs" into the white chocolate, covering all but a small circle on the top. Let cool on waxed paper. Makes 40 eyeballs. If you are feeling artistic, you may paint 'veins' on the sides of the eyeballs with blue or red food coloring. A black pupil in the center of the peanut-butter circle looks good too. And if you just can't stop, add a white candy disc (you know, the round sprinkles you can buy for cake decorating) as a highlight.
